I’m all about ghee! I’m getting quite a few questions about what it is and why it’s preferred over butter. Not only does it taste AMAZING (kind of like the richest and creamiest butter you will EVER eat), but it’s also better than butter in that it has most of the casein and lactose removed from it. Casein and lactose are found in dairy products and can wreak havoc on the digestive system for people that are sensitive to them. Since many paleo folks follow the lifestyle to alleviate digestive issues, ghee is a good option over butter for consumption. It serves as an excellent source of healthy saturated fats, vitamins, and micronutrients. It’s also resistant to high heat making it ideal for cooking.
