Yay eggs! I love them, always have, I hope people stop giving them a bad rap! They ARE NOT bad for you. That’s right, yolk included. Read it and weep folks. Or if you are like me, rejoice!
There is reference in this article however lumping saturated fats and red meat in with trans fats and industrial baked goods as contributors to increased serum cholesterol levels. I think a lot more research needs to be done around saturated fats (such as those found in red meat) in that I don’t believe they are the culprit for the diet related health issues that are persistent in today’s society. Trans fats and industrial baked goods (i.e. processed and refined foods) are where many of our dietary problems/issues stem from. And I think typically MOST people that eat a lot of red meat do so in the form of hamburgers (on a bun) or with white potatoes for example. So there are likely other factors in their diets and/or lifestyle contributing to adverse health effects. I’d like to see dietary studies done with people who follow a fairly strict paleo diet! I bet results would be a lot different if certain other dietary factors were controlled for (such as those dietary items that are excluded on a paleo diet).
They say proof is in the pudding right? I’ve been eating a ton of red meat, whole eggs and other natural saturated fats for YEARS. My diet has remained mostly free of trans fats and industrial baked goods and the like (aside from an occasional cheat of course). My HDL cholesterol levels (the good stuff) are through the roof, and my LDL cholesterol levels (the bad stuff) are low. My doctor looks at me in shock every year and always comments, “Wow, I’ve never seen this before.”
