A few months ago I bought a fantastic Cuisinart food processor. Eleven cup, touchpad control, dough option, blah, blah, blah. Today it finally made it out of the box and onto my kitchen counter. What the heck have I been waiting for?
One of my new fav dishes is paleo veggie fried rice. I’ve been using cauliflower and because I was afraid of the new appliance staring at me precariously from its boxed perch upon my table, I’ve been using a cheese grater to “rice” my cauliflower (and my fingers, ouch).
This week I bought a bag of mixed veggies that included broccoli, brussel sprouts, carrots and cauliflower. Craving my rice dish, not having enough cauliflower, and being too lazy to bust out my cheese grater I decided it was time. Enter, the new love of my life, my food processor. To be known as Cuisi going forward.
It made quick work of my veggies. I mean quick. I realize that while I’m still in awe over what to me is a miraculous small appliance, most of you reading this are rolling your eyes thinking “How is it possible that this chick, so into food and cooking and baking has never used a food processor?” What can I say. When it comes to some things, I’m a late adopter. I digress. Here’s what Cuisi did to my veggies.
And here’s what I did to them after Cuisi had his way with them (Cuisi seems like a he to me). Veggie rice, olive oil, egg and added some plain shrimp. Seasoned with garlic, salt and crushed red pepper. AMAZING! This veggie rice is WAY more flavorful than plain old cauliflower rice.
