Really? Paleo pasta? Yep, that’s what I’m talking about! Enter my recipe for spicy Apple Cinnamon Salmon with Zucchini and Apple Noodles.
I discovered this concoction accidentally (I think that’s always the case). Salmon filet in a pan on the stove top, a tbsp of olive oil, 1/4 cup of water, few shakes each of cinnamon, garlic (granulated or a clove or two minced), chili powder, Italian seasoning and a few pieces of apple that were leftover from my taking the “paderno” to it. Cover and simmer on low for about 15-20 minutes, or however done you like your salmon. Back to my paderno. This thing rocks by the way, check it out on Amazon. So I used this fun gadget to make noodles out of zucchini and a granny smith apple. You can leave the noodles raw or cook them a bit. I’ve been nuking them for about 2 minutes, they are al dente that way. You can also put them in a fry pan for a few minutes, or even boil them like regular noodles. They get soggy quickly so you have to be a little careful. I also tossed the noodles with more of the same seasoning noted above. That’s it! Ready to eat!
