Am I on fire this week or what? The answer is “Yes Allie, you are on fire this week.” I have yet ANOTHER recipe to share! It’s been a week of recipe development no doubt, and my creative juices have been flowing like the Amazon and Nile Rivers combined! Earlier this week I was very fortunate to have my paleo apple pie cookies featured on Instagram by #crushfit. The result of this awesome opportunity? I got a TON more followers on Instagram AND Facebook (who are asking questions about my creations!!) which sent me into recipe development overdrive. Inspiration and motivation have taken over, I am no longer in control of my own faculties. Is there such thing as paleo cooks anonymous? I’m an addict, I need help.
So far this week I’ve posted the recipe for my paleo apple pie cookies
and the recipe for my paleo ‘the bomb.com’ slow cooked pork roast
And now I present to you my recipe for paleo garlic and date chicken! I must say, this dish turned out to be amazing. A.M.A.Z.I.N.G. It was an experiment (of course because that’s how I roll) for a paleo pot luck dinner I attended last night. Feedback from the group was very positive and I was even asked for the recipe! So without further ado, here it is!
4 chicken breasts (boneless and skinless), chopped into pieces
1 dozen dates, chopped
4 garlic cloves, chopped/minced
4 tbsp coconut oil
2 tsp salt
1 tsp cinnamon
In a large stock pot add coconut oil and heat until it liquefies. Add all other ingredients and let simmer on low to medium heat for 45 minutes – 1 hour. Stir occasionally as it’s cooking. Done and YUM!
The coconut oil and dates meld together to make a DELISH sauce. This sweet and savory chicken dish rocks. Just sayin’.
