Now back to the sauce. I absolutely LOVE tomatoes and anything that involves tomatoes. I crave them. Even as a kid I loved tomatoes. My grandma would always have the sweetest most delicious cherry tomatoes waiting for me when I came to visit. Her neighbor grew them so they were freshly picked when I arrived. SO GOOD.
Of course the nutritionist and food scientist in me knows that when you crave something specific that means that whatever nutrient is in what you are craving, is a nutrient you are lacking. Of course I’ve researched this. Here’s some good information on tomatoes.
Tomato cravings can be indicative of an iron deficiency. Yes, I should probably talk to my doctor about this. But we are here to get sauced! Back to the topic at hand.
It’s really hard to find a good marinara sauce that doesn’t have a bunch of crap ingredients in it, and they all seem to contain sugar! So gross. This is why I started making my own. Here’s how it’s done.
For the sauce:
1 can tomato paste (6 oz), organic, and read the ingredients to make sure there isn’t anything in there other than tomatoes!
18 oz water, I just fill up the can the tomato paste was in about 3 times and dump that into the sauce pan
Sun dried tomatoes, about a handful
6-8 mushrooms, chopped, I leave them in pretty big chunks
2 tbsp Italian seasoning
1-2 cloves of garlic minced or chopped, or a couple tsp of granulated garlic/garlic powder
Salt to taste, I used about 3-4 turns of a salt grinder. I’m not big on salt and don’t use much ever, you may want to use more. Or none.
Crushed red pepper, I like spicy, very spicy, so I use quite a bit.
1 tbsp cinnamon, again I’d do this to your liking. I really love cinnamon. You may want to use less. Or more!
Dump it all into a sauce pan, stir together and simmer on low to medium heat until it comes to a boil and the mushrooms cook and soften.
For the meat:
1 lb of ground meat and the same seasonings as above to your liking and for your taste. Sometimes I’ll add the seasonings to the meat instead of the sauce. It’s all going to get mixed together anyway so it doesn’t matter much where you put it all.
Brown the meat in a fry pan. I don’t grease the pan at all but you can. I find there is enough fat in the meat (ground beef in my case) so there is no need to add fat to the mix. If you are using ground turkey or something that sticks to the pan or doesn’t have much fat in it I’d recommend using some butter, coconut oil or olive oil.
Once the meat is browned, dump it all into the simmering sauce, fat included. Simmer the entire mixture for about 15 minutes. Done.
Dang I’m sauced. How you doin’?
