Eggs are my comfort food. Thankfully they are part of the paleo diet so I can chow down on them to my hearts content! I could live on them. Really I could. I kinda do to be honest. Breakfast, lunch or dinner, no matter what the meal, eggs apply! My egg concoctions get pretty elaborate and are usually the result of random leftovers that I can’t figure out what to do with. The leftovers on their own just aren’t enough for a meal. I eat a lot :).
Here are a few examples of what I like to do with eggs:
The first picture was cauliflower fried rice I made the night before with salmon. Here I added shredded brussel sprouts, mushrooms, crushed red pepper, garlic (well, more garlic), and of course, EGGS! Oh and I fried it in a LOT of olive oil.
The second picture was left over carne asada that I had turned into spaghetti steak marinara. I took the leftover steak and marinara sauce, shredded brussel sprouts (yes I’m into those lately) and added a few eggs. Cooked in olive oil. YUM.
The third picture was what was left of the spaghetti steak marinara. This time I took the spaghetti squash I had left and topped it with and egg frittata thing I made using, yes, brussel sprouts and sundried tomatoes. This one has a name, it’s the bird’s nest!
I’m not sure which version was the best. They were all amazing, and definitely all one of a kind!
